Sometimes simple is best! This recipe for beef stir fry with broccoli and mushrooms is sure to make you say “yummy”!
My older sister is getting married next summer, after being with her finance for 25 years!! As hat is happening I have made the decision that now is the time to really kick start my “getting fit and healthy” plan that I have been neglecting to really get going on.
As such I am going to be pushing for more healthy and simple meals as a part of that. Not that my recipes are bad for you, I just want to try to cut out as much sugar, salt and carbs as possible for at least the next nine months. Goodbye to my favourite gluten free pasta and hello zucchini spaghetti!
To start this new way of thinking I decided to make a very simple and quick beef and broccoli stir fry.
To be honest I don’t eat many stir frys, it was never that big in my household as it is in some. Stir fry as I know it are very different from what I ate in China, the main similarity if they are a one pan or wok dish.
As stir frys are suppose to be a throw-it-all-in way of cooking I think that will be easier for me to maintain a healthy and proportioned meal balance as I can make a large dish of something and divide it up for meals throughout the week.
I wouldn’t say I am looking forward to the cravings but if I keep encouraging myself and have the support of friends and family (and readers) I know that I will be able to succeed. It is only the third day but I can tell I don’t feel like I am starving like I did for the first two days.
I keep looking to the future and not dwelling on the hard parts, something I will soon have to confront if I am to make it. I don’t have an overall goal but I am making mini goals that are doable.
First being to lose 20 pounds by November 13th, my 32nd birthday.
Second is to walk more, at least one hour every day.
Thirdly is to take up some type of dance class. I think I might start this at home with aid of youtube videos.
Fourthly is to look at the scale once November 13th rolls in as I do not want to become discourages.
Lastly is to always remind myself that while I may not beware I want to be on this journey, I have never had a failure.
So now that I have put this out for anyone and everyone to see I can only hope that I will find success and have a great time in the process coming up with fun exercise activities to do and delicious and filling recipes to continue sharing.
- ¾ pounds stir frying beef
- 2 tsp olive oil
- 1 cup water
- 5 cups broccoli, cut into bit size pieces
- 12 mushrooms, sliced
- 1 Tbsp ginger, minced
- 2 cloves garlic, minced
- ¼ tsp red pepper flakes,
- ¼ cup low sodium soy sauce
- Spring onion, diced
- Add ½ cup water and olive oil to large skillet or wok
- Add broccoli; cover and cook, tossing occasionally until broccoli is almost tender, about 3 minutes.
- Add mushrooms and ginger, garlic and red pepper flakes; stir until fragrant, about 1 minute.
- Add beef and soy sauce and stir to combine. Add more water if needed.
- Cook until beef is just cooked, about 8-10 minutes.
- Serve with rice and freshly cut spring onions.
